Sodexo has been named “Most Vegan-Friendly College in America” at Northwestern University by the group PETA2. Vegan Burritos are a well known student favorite at Northwestern University. Here is a burrito recipe enjoyed by many of the Sodexo chefs!

 

 

1 tablespoon olive oil
1 cup green peppers julienne
1 cup yellow onions julienne
1 tablespoon garlic chopped
1 ˝ lbs vegan burger crumbles
1 tablespoon taco seasoning
12 10-inch flour tortillas warm
15 oz canned Pinto beans drained
2 cups Iceberg lettuce shredded
1 ˝ cups fresh tomato diced
1 ˝ cups mild or hot salsa

1. Heat oil in a large skillet over medium heat. Add Julienne onions and green peppers. Saute until onions and peppers are crisp tender. Remove onions and peppers from skillet. Keep warm.
2. Add garlic to the skillet and sauté for 1 minute, stirring frequently. Add vegan burger crumbles and taco seasoning. Mix well. Cook until heated or to a temperature of 165 degrees F or above, stirring occasionally.
3. Lay flour tortillas on a clean work surface. Place 1/3 of a cup of seasoned burger crumbles in the center of each tortilla. Top with 2 tablespoons of Pinto beans, 1 tablespoon of onions, 1 tablespoon green peppers, ˝ cup shredded lettuce, 2 tablespoons of salsa.
4. Fold in edges of tortilla over filling. Roll up tightly. Cut burrito in half diagonally and serve.
